Vegan Caesar Dressing

Ingredients

  • 15ml Dijon mustard
  • 30g nutritional yeast
  • 120g vegan mayonnaise
  • 5ml crushed garlic
  • 2 tsp capers
  • 30ml lemon juice
  • 15ml soy sauce (or tamari for gluten-free)
  • 15ml maple syrup
  • 15ml extra virgin olive oil
  • 5ml distilled white vinegar

Instructions

  1. Add all ingredients to a measuring jug.
  2. Blend with an immersion blender (or transfer to a regular blender) until smooth.
  3. Serve immediately or refrigerate.

Tips & Notes

  • Blending (not whisking) is required — the capers need to be emulsified in. Immersion blender is easiest, regular blender works too.
  • “Fishy” in a good way — the capers + nutritional yeast + soy sauce create that umami punch that mimics anchovy + parmesan without using either.
  • Makes ~1 cup / 240ml.
  • Keeps 5 days fridge. Not freezer-friendly.
  • Gluten-free? Use tamari instead of soy sauce.
  • Uses: Caesar salad (obviously), any green salad, or as a dip for chips/veg.
