Vegan Caesar Dressing

Ingredients
- 15ml Dijon mustard
- 30g nutritional yeast
- 120g vegan mayonnaise
- 5ml crushed garlic
- 2 tsp capers
- 30ml lemon juice
- 15ml soy sauce (or tamari for gluten-free)
- 15ml maple syrup
- 15ml extra virgin olive oil
- 5ml distilled white vinegar
Instructions
- Add all ingredients to a measuring jug.
- Blend with an immersion blender (or transfer to a regular blender) until smooth.
- Serve immediately or refrigerate.
Tips & Notes
- Blending (not whisking) is required — the capers need to be emulsified in. Immersion blender is easiest, regular blender works too.
- “Fishy” in a good way — the capers + nutritional yeast + soy sauce create that umami punch that mimics anchovy + parmesan without using either.
- Makes ~1 cup / 240ml.
- Keeps 5 days fridge. Not freezer-friendly.
- Gluten-free? Use tamari instead of soy sauce.
- Uses: Caesar salad (obviously), any green salad, or as a dip for chips/veg.
