Vegan Caesar Salad

Ingredients

Croutons

  • ½ loaf sturdy bread, slightly stale, cut into squares
  • 60ml olive oil (¼ cup) + extra for drizzling
  • ¼ tsp salt
  • ½ tsp dried oregano
  • ½ tsp dried basil

Salad

  • 1 large head romaine lettuce, finely chopped
  • 60g fresh parsley, finely chopped (~1 cup)
  • 30g vegan parmesan cheese (~¼ cup)

Croutons

  1. Preheat oven to 190°C.
  2. Cut bread into squares. Add olive oil, salt, oregano, and basil to a large bowl. Add bread cubes and toss to coat.
  3. Spread on parchment-lined baking tray. Drizzle a little extra olive oil.
  4. Bake 15 minutes, turning halfway. If not crispy enough, give them a few more minutes.

Salad

  1. Chop romaine and parsley. Add to salad bowl with vegan parmesan.
  2. Add croutons. Toss together.
  3. Pour vegan caesar dressing over the top. Serve immediately.

Tips & Notes

  • Croutons are the star — make them crispy so they don’t sog out in the dressing.
  • Store-bought croutons work if you’re short on time. Amount is flexible.
  • Serve immediately after dressing — once dressed, croutons will soften and salad loses its edge.
  • Make-ahead: Prep all components separately. Add croutons + dressing at the last minute.
