Easy Homemade Vinaigrette

Ingredients

  • 30ml extra virgin olive oil
  • 15ml red wine vinegar
  • 15ml lemon juice
  • 5ml crushed garlic
  • 5ml dried oregano
  • Pinch sea salt
  • Pinch black pepper

Instructions

  1. Add all ingredients to a small jug or jar.
  2. Whisk or shake until well combined.
  3. Taste and adjust salt and pepper. Pour over salad.

Tips & Notes

  • Makes enough for one large salad — about 4 servings. Triple it if you want a week’s worth.
  • Red wine vinegar is the key — it’s naturally slightly sweet. If substituting white wine vinegar, apple cider vinegar, or balsamic, add 5ml maple syrup to balance.
  • Fridge: 1 week. Oil may solidify slightly — let it sit at room temp for a few minutes, then shake before serving.
  • Room temp: 2-3 days max.
  • So simple you can make it fresh every time. Literally two steps, done.
