Vegan Italian Dressing

Ingredients
- 120ml extra virgin olive oil
- 45ml white wine vinegar
- 45ml lemon juice
- 30ml maple syrup
- 1 clove garlic, crushed
- 15ml Dijon mustard
- ¼ tsp sea salt
- ¼ tsp black pepper
- 2 tbsp nutritional yeast (30ml)
- 1 tbsp fresh thyme, finely chopped (15ml)
- 1 tbsp fresh oregano, finely chopped (15ml)
- 1 tbsp fresh basil, finely chopped (15ml)
- 1 tbsp fresh parsley, finely chopped (15ml)
Instructions
- Add olive oil, vinegar, lemon juice, maple syrup, Dijon mustard, salt, pepper, and nutritional yeast to a small bowl or measuring jug. Whisk until emulsified.
- Add crushed garlic and all fresh herbs. Gently whisk until just mixed. Do not whisk vigorously — it’ll liquify the herbs.
- Serve immediately over salad.
Tips & Notes
- Fresh herbs > dried by a lot. If you must use dried, sub 5ml (1 tsp) each of dried thyme, oregano, basil, and parsley.
- Keeps 5 days in an airtight container in the fridge. Not freezer-friendly.
- Makes 240ml — enough for several salads.
- Balance is the point — richness from oil, tang from vinegar and lemon, sweetness from maple, savory from nutritional yeast and mustard, freshness from herbs.
