Vegan Italian Dressing

Ingredients

  • 120ml extra virgin olive oil
  • 45ml white wine vinegar
  • 45ml lemon juice
  • 30ml maple syrup
  • 1 clove garlic, crushed
  • 15ml Dijon mustard
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • 2 tbsp nutritional yeast (30ml)
  • 1 tbsp fresh thyme, finely chopped (15ml)
  • 1 tbsp fresh oregano, finely chopped (15ml)
  • 1 tbsp fresh basil, finely chopped (15ml)
  • 1 tbsp fresh parsley, finely chopped (15ml)

Instructions

  1. Add olive oil, vinegar, lemon juice, maple syrup, Dijon mustard, salt, pepper, and nutritional yeast to a small bowl or measuring jug. Whisk until emulsified.
  2. Add crushed garlic and all fresh herbs. Gently whisk until just mixed. Do not whisk vigorously — it’ll liquify the herbs.
  3. Serve immediately over salad.

Tips & Notes

  • Fresh herbs > dried by a lot. If you must use dried, sub 5ml (1 tsp) each of dried thyme, oregano, basil, and parsley.
  • Keeps 5 days in an airtight container in the fridge. Not freezer-friendly.
  • Makes 240ml — enough for several salads.
  • Balance is the point — richness from oil, tang from vinegar and lemon, sweetness from maple, savory from nutritional yeast and mustard, freshness from herbs.
