Thai Peanut Dressing

Ingredients

  • 120g creamy peanut butter
  • 30ml fresh lime juice
  • 30ml rice vinegar
  • 30ml low-sodium soy sauce or tamari
  • 15ml maple syrup (or agave nectar)
  • 5ml toasted sesame oil
  • 5ml sriracha
  • ¼ tsp ground ginger
  • 1 clove garlic, roughly chopped
  • 15-30ml water or coconut milk, if needed (to thin)

Instructions

  1. Put all ingredients in a sealed mason jar or small bowl.
  2. Shake or whisk until evenly combined.
  3. If too thick, add water or coconut milk 1 tbsp at a time until desired consistency.
  4. Serve immediately or refrigerate in a sealed container up to 1 week.

Tips & Notes

  • Shake in a jar — easiest method, no mess.
  • Want it spicier? Add more sriracha.
  • Want it herby? Add ¼ cup chopped fresh cilantro.
  • Want it thinner? Add extra water or coconut milk.
  • Tamari = gluten-free option instead of soy sauce.
  • Uses: green salads, slaws, pasta salads, noodle dishes, stir-fry finisher, veggie tray dip.
  • Double batch friendly — scales straight up.
