Thai Peanut Dressing

Ingredients
- 120g creamy peanut butter
- 30ml fresh lime juice
- 30ml rice vinegar
- 30ml low-sodium soy sauce or tamari
- 15ml maple syrup (or agave nectar)
- 5ml toasted sesame oil
- 5ml sriracha
- ¼ tsp ground ginger
- 1 clove garlic, roughly chopped
- 15-30ml water or coconut milk, if needed (to thin)
Instructions
- Put all ingredients in a sealed mason jar or small bowl.
- Shake or whisk until evenly combined.
- If too thick, add water or coconut milk 1 tbsp at a time until desired consistency.
- Serve immediately or refrigerate in a sealed container up to 1 week.
Tips & Notes
- Shake in a jar — easiest method, no mess.
- Want it spicier? Add more sriracha.
- Want it herby? Add ¼ cup chopped fresh cilantro.
- Want it thinner? Add extra water or coconut milk.
- Tamari = gluten-free option instead of soy sauce.
- Uses: green salads, slaws, pasta salads, noodle dishes, stir-fry finisher, veggie tray dip.
- Double batch friendly — scales straight up.
