Ingredients

  • Sætar kartöflur (sweet potatoes)
  • Gulrætur (carrots)
  • Laukur (onion)
  • Hvítlaukur (garlic)
  • Engifer (ginger)
  • Chili
  • Kókosmjólk (coconut milk)
  • Rautt karrí (red curry paste/powder)
  • Hnetusmjör (peanut butter)
  • Lime

Instructions

  1. Sauté the aromatics and spices.
  2. Add all vegetables together with coconut milk and red curry.
  3. Simmer until everything is cooked through.
  4. Blend the soup until smooth and thick (the author always blends this one).
  5. Finish with peanut butter and lime juice.
  6. Top with fresh coriander and roasted peanuts.

  • Serves ~4. 30 min total.
  • Author’s preference: This soup is blended — she finds sweet potato soup is one of the few soups that works best pureed.
  • Consistency: Deliberately thick and filling, not thin.
  • Serving suggestion: Serve with homemade flatbread (pönnubrauð)
  • Toppings: Fresh coriander and roasted peanuts. Vegan yogurt also works.
