- Laukur (onion)
- Hvítlaukur (garlic)
- Engifer (ginger)
- Chili
- Kókosmjólk (coconut milk)
- Rautt karrí (red curry paste/powder)
- Hnetusmjör (peanut butter)
- Lime
Instructions
- Sauté the aromatics and spices.
- Add all vegetables together with coconut milk and red curry.
- Simmer until everything is cooked through.
- Blend the soup until smooth and thick (the author always blends this one).
- Finish with peanut butter and lime juice.
- Top with fresh coriander and roasted peanuts.
