Mexican Corn Salsa (Maískornasalat)

Ingredients

  • 1 can (approx. 340g drained) sweet corn
  • 7.5ml vegan butter or margarine
  • ¼ red bell pepper, finely diced
  • ¼ red onion, finely diced
  • ½ red chili, deseeded and finely chopped
  • 50ml fresh cilantro, chopped (optional)
  • Juice of ½ lime
  • 2.5g sea salt
  • 1 heaped tbsp (approx. 20ml) vegan mayonnaise
  • 1 heaped tbsp (approx. 20ml) vegan sour cream
  • Salt & pepper, to taste

Instructions

  1. Heat vegan butter in a pan over medium. Sauté the drained corn for a few minutes until some kernels turn lightly golden.
  2. Transfer corn to a bowl and let cool slightly.
  3. Finely dice the bell pepper, red onion, and chili. Chop the cilantro.
  4. Mix all vegetables with the cooled corn. Add the lime juice, salt, vegan mayo, and vegan sour cream. Stir well.
  5. Season with salt & pepper to taste. Serve chilled or at room temperature.
