Mexican Corn Salsa (Maískornasalat)

Ingredients
- 1 can (approx. 340g drained) sweet corn
- 7.5ml vegan butter or margarine
- ¼ red bell pepper, finely diced
- ¼ red onion, finely diced
- ½ red chili, deseeded and finely chopped
- 50ml fresh cilantro, chopped (optional)
- Juice of ½ lime
- 2.5g sea salt
- 1 heaped tbsp (approx. 20ml) vegan mayonnaise
- 1 heaped tbsp (approx. 20ml) vegan sour cream
- Salt & pepper, to taste
Instructions
- Heat vegan butter in a pan over medium. Sauté the drained corn for a few minutes until some kernels turn lightly golden.
- Transfer corn to a bowl and let cool slightly.
- Finely dice the bell pepper, red onion, and chili. Chop the cilantro.
- Mix all vegetables with the cooled corn. Add the lime juice, salt, vegan mayo, and vegan sour cream. Stir well.
- Season with salt & pepper to taste. Serve chilled or at room temperature.
Tips & Notes
- Quick & easy — takes about 10-15 minutes from start to finish.
- Swap veggies — use whatever you have on hand; the core is corn + lime + mayo/sour cream.
- Perfect with — tacos, grilled food, as a side, or straight from the bowl with tortilla chips.
