Baked Nachos with Vegan Mince, Cheese Sauce & Salsa

Ingredients

Vegan Mince

  • 1 bag tortilla chips (enough to cover a baking dish)
  • 320g vegan mince (e.g. Anamma, or any brand)
  • 2 cloves garlic, pressed
  • 2 tbsp tomato purée
  • 1 tsp smoked paprika (or regular paprika if you don’t like smoky)
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp onion powder
  • ½ tsp chili powder
  • 100ml water
  • 2 tsp soy sauce
  • Salt & pepper, to taste
  • Juice of ½ lime

Assembly

Guacamole

  • 2-3 avocados
  • ½ onion, finely diced
  • 2 cloves garlic, pressed
  • ½ tomato, diced
  • 2 tbsp fresh coriander, chopped
  • Juice of ½ lime
  • Pinch of chili flakes
  • Salt & pepper, to taste

Toppings (choose your own)

  • Guacamole
  • Fresh coriander
  • Spring onions (scallions)
  • Vegan sour cream
  • Lime juice
  • Black beans
  • Sweetcorn
  • Fresh or pickled jalapeño
  • Fresh tomatoes
  • Pickled red onion

Instructions

Mince

  1. Heat oven to 200°C.
  2. Sauté vegan mince in a pan with a little oil until it softens slightly.
  3. Add pressed garlic, cook 2 more minutes.
  4. Add tomato purée, spices, soy sauce, and water. Cook a few more minutes.
  5. Squeeze in lime juice. Remove from heat.

Guacamole

  1. Mash avocados roughly in a bowl.
  2. Finely dice onion and tomato. Press garlic. Chop coriander.
  3. Mix everything together with avocados. Squeeze in lime juice.
  4. Season with salt, pepper, and a pinch of chili flakes.

Assembly & Bake

  1. Spread tortilla chips in an ovenproof dish.
  2. Top with the cooked mince, cheese sauce, salsa, and grated vegan cheese.
  3. Bake ~10 minutes until cheese is melted and everything has a light golden colour.
  4. Remove from oven. Top with guacamole, spring onions, coriander, vegan sour cream, lime juice — whatever you like.

Tips & Notes

  • Serves 3-4 as a main, or more as a starter/snack.
  • Cheese sauce — make it once, use half here, save half for tacos later in the week.
  • Guacamole with frozen avocado — Helga María says this works surprisingly well. Defrost first, then mash.
  • Toppings are infinite — black beans, sweetcorn, jalapeño, fresh tomatoes, pickled red onion… go wild.
  • Make it a full meal — add extra beans and veg on top, serve with a side salad.
